• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

So I have a old country smokehouse and I have it loaded down with 5 butts and 2 packers. My smokehouse has 3 charbroil 3in themometers on the door. So I bought a maverick et-733 put on the bottom great between the brisket and its reading 275. Well the lower door themometers reading like 400. So something isn't right! The brisket was sizzling and definitely seemed like it was cooking at 400. It cooked at 400 for about 30 min. I pulled the maverick and went by my door temps! Any help would be appreciated on the safety of my brisket!the, butts are ok, I switched the brisket to the top rack so they would slow down.
 
If you have the pit probe too close to the meat it will read really low, there's an article about this on AmazingRibs somewhere. Move it at least a few inches away from anything on the pit.
 
Smokers packed lol. How much do you think themometers on the door are off? And are my Briskets ok?
 
But an oven thermometer and put it on the shelf next to the meat next time.
 
uh oh- You have entered "Wag-ville City Limits" During your practice cooks, if you never got around to sync your door thermos to a digital one on the grate, you won't know how accurate (or inaccurate they are). Sadly, there is no way for us to know what the actual temp offset is door to grate.
If it makes you feel any better - lot's of butts and briskets were cooked before thermometers became popular.

Gotcha, you think the Briskets are ok cooking for about 45 minutes at 400?

I've cooked that hot once the whole cook and other than the bark being a little crispy in spots it was fine. I would take the middle therm out and test it in boiling water to see how accurate it is.
