Hey all... I was referred to your site by a co-worker of mine. When it comes to smoking meat, this looks to be the place to come.

I am a newbie, just recently upgrading from a cast iron smoker box for the gas grill to a 30" electric smoker... Probably sacrilegious to most, but it seems to be getting the job done. Since last fall, I have tackled 50 lbs of pork butts (got a request for pulled pork on Mom's day), several trout (turned into jerky, but still tasty), a few chickens, a turkey (yawn) and a few racks of ribs.

I really would like to master the ribs as this is both my son and mine's all time favorite.

Thanks!

Electric smokers are not sacrilegious, just boiling ribs and using liquid smoke.
