Hello all. I'm PSmitty from South Orange, NJ. I've been grilling for years, and am ready to step my game up to some serious smoking and traditional BBQ. I'm really interested in developing competition level skills and techniques, even if I only use them in the backyard.
I've got a Weber Kettle where sometimes magic happens even in spite of myself. I've got a Chargriller w/ SFB that I use much less frequently, but I've got a bunch of mods that I'm planning to get it in the mix much more often. And I just got Big Mama (pictured), a custom smoker/grill built for me in NC. My folks in Solomons,MD got one too.
My wife is a part-time caterer and we both love to cook. She'll really enjoy taking pics to post for pron. On the flip side, she does not eat beef or pork, so I'll be constantly looking for taste testers for the traditional meats.
Any and all advice is accepted, and I'll keep you posted on my progress.
