I have been Q'n for 15 or so years. Love to cook any and all cuts of meat that will fit in my cookers.
My favorite cooker is my 4 month old 18.5 WSM that I have done some mods on. I use the foiled 12.25" foiled clay pan setup and RO Lump.
Favorite smoke woods are Apple for pork, Pecan for beef and Hickory for everything else.
