Just finished my UDS using lots of advice from this site.
Did a trial run with a chicken & my first fatty ever.
Tonight am doing a couple of pork loins to take to work.
I have been using char grill offset & start with charcoal and the all wood. needed to check ever hour, it looks like the UDS is a completely different animal.

I saw your name and had a gut feeling that you'd be from Kalona. When I traveled in your area for business, I'd buy chickens, eggs, and other goodies from the Amish farmers in the area.

i started with a Chargriller, then move to the UDS too. you are going to love the UDS, and this forum. one more thing we have in common - for a while my nickname was Yoder at work, because of the chin-whiskers i sported for awhile - so i got a chuckle when i saw your handle..... welcome to the club
 
Pork Loins turned out great!
one with mustard & pepper rub, one bacon wrapped.
UDS 4 hours @ 250. internal temp around 255 bacon was still rubber so cranked up to 325 to crisp up bacon.
char griller will probably only be used for grilling?

grilling is all i use mine for now........unless i am cooking more than i can cram in the drum. i need to find another barrel.:p:p:p
