As many other new comers I have made the plunge. I am so freaking excited. After reading around the forums and seeing all of the great talent I had to jump in and hope some of that talent might rub off. I've been using different types of smokers from my weber upright to my current 2 chargrillers off sets and a Caja China box (it's actually roasting) that I use for whole pigs going on 5 years now. It's become such a hit that I decided to bite the bullet and do it right. I'm in the process of getting a Lang 84 and a spicewine upright.
My wife thinks I'm absolutely crazy, but that's a known fact. Hope you guys don't mind one more fanatic out here. I'm hopefully picking up both of them in the next 8 weeks so as I have pictures I'll send them along.
The other thing I like doing that is becoming a huge hit is my jambalaya. With recent events being what they are we've switched catfish for gator meat and boy is it good!
And oh yeah GO BUCKS!
