Greetings Pit Masters,

My name is Billy and I am a friend of MrTodd777. I live is Dallas, but I have a small farm house on 28 acres in the woods in Red River County where I spend most of my free time. That is where my new to me old smoker is. I am a home brewer and a 4-5 times a week griller. however I have never smoked anything before. A few weeks ago I acquired an old homemade offset smoker from a neighbor and I am in the process of churching it up. It looks like it is made from maybe either an old propane or compressor tank and it is build like a tank. My neighbor was nice enough to move it to my house with his tractor. I will post some pics of it in another thread later to show off my progress and ask for advice. I think I need to drill a hole and add a thermometer. My wife gave me a book called Project Smoke and I may have jumped the gun a bit because I have already bought 4 briskets, 4 racks of ribs and 2 tenderloins. But, they were on sale at Kroger and I just could not pass it up. They are all resting in my deep freeze waiting for their chance to shine. Hopefully.

Been a few years but hunted some north of Clarksville. That place in Detroit on 82 did a great job deer processing.

Yes Sir. I am about ten miles north of Clarksville and there is no shortage of deer hunters around here during season. The Detroit Locker Plant is a good one. Nice knowledgeable people.
