• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

They are starting to hit the stores down here. What would be the best way to:

1) Roast
2) Preserve
3) Use in General
 
There are a number of great ways to use those types of peppers. These are just 2 of my favorites:

1. Pepper fillets
"blister" the skin of whole peppers over hot coals then let cool off in a plastic bag. Then, remove skin, core and use on burgers omlettes, etc.

2. " smoke dry"
and crush into flakes or grind into powder as I've discussed many times before for use in sauces, salsas, rubs, etc.
 
Some of the finest peppers known to man, from Hatch, New Mexico! :D
 
Core, seed, stuff with a rice, lamb and oregano mixture, roast.

Check Central Market. I've found the Sandia and Big Jim varieties there. Going to Albertson's or other grocery store you usually get the mildest (name escapes me). Market Stree might have several varieties though, have to check next time I'm over that way.
 
Finally got my mouse finger reattached after mark bit it off. Checking out Market Street tonight or tomorrow.

Central Market here in Houston has a Hatch "festival" - roasters out front (cooking with gas) - cases for sale - hot (really medium hot) and mild - if you have something you like that needs green chilli - you need these guys

Bought 5 lbs at Market Street last night. But they where mild damn the luck. Was going to roast today but just started raining here. So maybe not ? If you all find any hot ones let me know.

Give Central Market a ring. Ask them if they have the Sandia (San-dee-uh) variety. Big Jim is the medium. Both vary from year to year.
 
Made meat loaf Sunday put some chiles in it. Good stuff.
