• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Mrs Phan and I are meeting up with Bowhnter and his bride phor lunch, so tonight will prolly be lephtovers.
Tomorrow, a turkey breast per Mrs Phan's request.
Might as well throw a couple phatties in to keep the turkey company.

Single Parent Ops for me this weekend, so I asked my girl what she would like for a special Phriday Night Dinner... she hemmed and hawed, but then had a flash of brilliance and asked for Saigon 21 pho ga "with long noodles" (she's very concerned about the noodle choice).

I'll go to MSU for Sat and Sun, but we'll try to make it phun for the munchkin.

Tonight was a couple 2lb pork steaks I started curing last Friday. 3.5hrs on the WSM at ~225*F, hour in the oven in the drip pan at the same, and then cranked up the heat to 325*F for the last few min. Black pepper, no salt Cav and Tony's, and a whole lotta jalapeno powder. Was as tender as a beef filet (and about as red too, lol)




cashin in a gift certificate for a real good pizza place tomorrow, so nothing, and Sunday i'm thinkin bacon-on-a-stick/cured spares
 
Paging Dr phu and all his merry ember heads.....how y’all doern??? Well 5 months post covid I still have almost no taste besides salt butttt....went to costco and got my other chilean sea bass (previously frozen) @ $23. Feeds her for two nights and she loves it grilled. Made poppers which she also loves. Also bought a brisket for next monday. Should finish my son’s outdoor kitchen this week (really it’s for my forthcoming first and only (that I know of!!) grandchild. Longwinded ain’t I??......Have a wonderful weekend dudes and dudette. PEACE....!!

I smoked a brisket Friday night. My son and his GF were coming over Saturday to celebrate son's BD.
I put the meat on the UDS at 10pm and kept the smoker at +/- 280*. Pulled it at 190* I.T. and foil wrapped at 4am. Put it in the oven set at 220*. It was probe tender at 9am. Set it on the counter and let it rest until about 2pm. Put it back in the oven at 170* I.T. Sliced and ate at 7pm.
Everyone loved it and it was tender and moist. :clap2:
