• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Cast iron skillet pot pie on the kettle tonight, sous-vide then charred venison brats tomorrow, and rotisserie chicken Sunday!

Well, Mum has decided that she's staying with my in-laws tonight and tomorrow night, so I told her she misses out on smoked meatloaf...but I don't think there'll be any TBS rolling this weekend unfortunately.
 
I'm smoking for the family in Deepcreek, Md. 25 of us here. Looks like a few slabs of SLCs, Spatchcock Chickens, Pork Riblets and Keilbasa on the PBC.

Last night i got access to FRESH JUMBO SHRIMP from the one and only Gulf of Mexico. Peeled and baked in the oven with Cavenders,GP, salt n cracked pepper. Best I've ever done, they actually had a little crunch so they were perfect done ness and you can Really taste the shrimp. Got a good size Boston Butt for tomorrow so damn the torpedos (and Mississippi heat).....let's get it on......
 
Found a turkey to test out my new Spitjack rotisserie with (not easy to find a turkey in August!) so I'll be doing that, plus Sunday will be all about low smoking with bacon and sausage, maybe beef jerky as well.

Phu! I'm thinking some pizzas. Also I catered last weekend and have a bunch of pork bones, so not que, but gonna try to make some killer pork stock. Kinda weird that beef, chicken, and veg stock are all commercially available, but you never see pork stock... I wonder why?
