• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I've been smoke drying habanero's all summer long and should finish the last of this year's crop off this weekend. I want to get any advice on what you would use (and proportions) for a 10-pound batch. For the sake of establishing a base case, please modify the following list of ingredients:

  • 4 pounds smoke-dried habanero powder
    2 pounds salt
    1 pound garlic powder
    1 pound onion powder
    1 pound tomato powder
    .5 pound cumin powder
    .5 pound coriander powder
 
I want some when your done :wink:
15% smoke-dried habanero powder
25% salt
10% garlic powder
15% onion powder
25%tomato powder
2.5% cumin powder (Toast)
2.5% pound coriander powder
5% amchur powder
 
You actually have 4lbs of dried habanero powder?

Curious - why use weight proportions as opposed to volume proportions?
 
I had to look up amchur powder. As a matter of fact, I was considering citric acid crystals for the same basic purpose; add tartness. But amchur powder sounds alot better! Thanks!

As far as measuring weights instead of volume; it's because salt is alot more dense than powders.

And no, I will have bout 20 lbs of smoke-dried habanero powder after this weekend

In batch cooking and preparing for repeated results weight is more accurate. This is especially true in baking - but would hold true here, too.

.5 pounds is always .5 pounds while 2 cups may be .45 one day and .525 the next due to sloppy measuring, humidity, type of measuring cups (did you know there IS a difference in the volume of a wet cup measure and a dry cup measure?), etc.

The rub turned out good.. I had some on fried eggs this morning. Can't wait to rub a butt.

Here's what wen t in to it.

Grinding and mixing was an intense experience.

PS: By-the-way, this stuff should be used with proper respect. Even trace amounts of the the dust, if inhaled, WILL cause sneezing, burinng of your sinuses, not to mention a snot flood. Applying it should be done with disposable gloves and if you don't and then take a leak; be prepared to soak your member in alcohol. SERIOUSLY.

One of the quickest ways to get in the doghouse.....I thought I had washed my hands thoroughly (I had made some habenero salsa) earlier in the day . It must of been my birthday because the wife was in the mood......hotbox mod......I have to make salsa in secret now
 
Didn't you notice any heat on your hands?

BTW: Capsicum is soluble in alcohol or fat. Soap & water is not effective.

I really dont notice capsium on my hands so much as long as its on my palms and front part of fingers...i can feel it on my knuckles if I get sloppy........ I think the little bit of callous i got built built up deadens the heat

That's news to me. When I chomp down on a serrano or hot jalapeno and try to wash it down with beer, it only seems to get hotter.
