I've been smoke drying habanero's all summer long and should finish the last of this year's crop off this weekend. I want to get any advice on what you would use (and proportions) for a 10-pound batch. For the sake of establishing a base case, please modify the following list of ingredients:
- 4 pounds smoke-dried habanero powder
2 pounds salt
1 pound garlic powder
1 pound onion powder
1 pound tomato powder
.5 pound cumin powder
.5 pound coriander powder
