I'm sorry but thats just sick and wrong! a VEGGIE Kabob!? lol
Can't say that I have, but I do like beets. Gonna check that out this summer after my beets are ready.
 
I have never had them as a kabob but I have roasted my fair share. I give them a healthy coating of EVOO and course salt and then roast them at 450 or so until they are tender. Really good with a big steak. Now that you mention it, I might have to put a couple on the smoker and see if I can run the temp up high to get similar results. Good luck.
