I have never had them as a kabob but I have roasted my fair share. I give them a healthy coating of EVOO and course salt and then roast them at 450 or so until they are tender. Really good with a big steak. Now that you mention it, I might have to put a couple on the smoker and see if I can run the temp up high to get similar results. Good luck.

Smokin Aussie used something like that in a throwdown I think, burger maybe? Sounded good.
