• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Hi all, I'm a complete smoking n00bie. I recently started a job at a new company and one of the standing morale events is a BBQ competition. Every other month they pick a dish and people submit their entries. The whole team gets to sample the entries and vote on their favorite. I've had BBQ plenty of times before but I don't know it was just kinda meh. However some of the meat I've had at these competitions was startlingly good. This one guy made beef short ribs so good that eating them was almost like a religious experience.

Anyway, the common denominator between the dishes I liked is that they were all smoked. So I've been inspired to research smoking and BBQ in general. I got that book Meathead and I realized that I really didn't know anything when it came to BBQ, and everything I thought I knew was wrong. Now I've found this forum and it's been a great resource so far. Comparing various BBQ forums, I get the vibe that many posters here really know what they're talking about, which is not the same as on many other forums.

My goal is to learn enough to smoke a turkey for Thanksgiving this year. I'm going to do a trial run (or two) on chicken to try out spatchcocking and brining and then it's on to the main event. Wish me luck!

Welcome, I just smoke my bird with Mesquite lump charcoal mix and watch the temps. Use a drip pan the smokie drippings make the best gravy.
