• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

.....you need to do something with and have not tried enchiladas or you have tried em and haven’t tried taters in em, then give it a shot. They even freeze well in food saver bags once they get cold. We made 20 of em in two pans and food savered one for later and proly got enough for lunch today left over from supper out of the first pan. I was a little short on sauce and that’s not good but they were good enough it didn’t matter much.

It only takes about 2 seconds on each side for the torts and then just stack em up about two to a paper towel until they are all done.

Putting them together is easy but you need to plan it out and portion out your filling so you’ll have an idea how much to put in each tort.

Love the rice and beans and with loads of garlic in the rice like we use, just rice and beans make a purty good taco.

Those look great. I have done diced onions & peppers before but not taters.
 
I love enchilada with any kind of filling... your look awesome. I took pulled pork tamales out of the freezer for tonight... I can't wait to eat 'em.
 
Looks great. I made them once and I think I oversmoked the pork. We also make nachos with our pork. We take a plate add restraunt style chips, refried beans cooked with a little sour cream, pork , lots of cheese. Then we microwave, add onions, olives tomatoes, more sour cream, avacado and salsa. Get's eaten up.
 
Looks good. I have a couple of bags of pulled pork in the freezer now and hadn't decided exactly what I wanted to do with it yet.
 
Looks good! I'm too lazy to roll them so I just make enchilada casserole. Instead of rolling them, I just layer everything like lasagna and then bake it.
 
I was reading Doc BBQ's "Barbecue All Year Long" book yesterday and that plate of grub looks a lot like something he'd put together!

And Ray - if you read this - I could use a new page if you'd send me one. I spit beer all over your turkey recipe for the perfect breasts. :biggrin:
