• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

The out-laws are hitting town for the holidays and my farter-in-law says he'd like goose. People pleaser that I am, if it's goose he wants, it's goose he's gonna get. I've smoked plenty of turkeys, a bunch of ducks, but never a goose. Anybody have any suggestions, words of encouragement, offers to take the relatives for the holidays?

Seriously, Goose on the smoker is wonderful. Expensive, but wonderful.
One thing to know, a goose--pound for pound-serves less than half what a small turkey does. If you can get enough meat off a 10 pound goose for 4 or 5 folk, you are lucky. Also lots of fat, not as much as a duck, but lots to deal with.
I always use a seperate drip pan, put some water in it, and catch the fat.
Otherwise, proceed just like you would with a turkey. Brining and injecting are options. I usually cover the bird with cheesecloth dampened with apple juice, then remove the last hour or so, and crank up the temp to crispen the skin.
 
I agree with Qman. Goose is good but very costly unless you go shoot one yourself. Be prepared to spend $35+ for an average sized one.
 
For some reason the geese in my lakes and many others around here don't migrate. All you need to get one is a fishing line with a piece of bread hooked to it. You may also need a good defense lawyer if you get caught.
