Howdy!
My name is Chris. I've been cooking on a gas grill for years and am pretty good with it, but lately I'd been feeling a little... incomplete. A few months ago a buddy at work turned me on to this site and something called a "UDS" (yeah, at least it was new to me). Well, they both seemed like exactly what I was lacking - true BBQ. So now, here I am. I just finished my UDS a couple of days ago, ran some Lazzari lump through it for a few hours to get a feel for it, and today I'll cook with it for the first time! Wish me luck!

Welcome aboard! My dad lives up in Salem if you ever need a "tester" he is quite the indoor cook.

Thanks! I'm going to start with something simple - chicken. I know how to not ruin chicken so until I get a good feel for how my UDS cooks I thought it best to not take a chance on destroying dinner.
