'Morning Brethern,
I'm Keith from Parker Co, just outside Denver. I was "nudged"here by a friend who overhear me saying that I was shopping for an electric smoker. I just can't keep my temps stable enough in the weber kettle. Anyway, he explained this site to me and the concept of the UDS... and I gotta say, I was a bit skeptical at first... ("no water???... only 1/2 inch ball valve... that'll never work"). Well, after lurking here for two weeks, I'm a connvert and hopefully, the guy in Longmont will call today to tell me I got a barrel to try this out. You folks are nothign if not convincing!
Anyway, I brew beer, fly airplanes and take long walks on the beach... If there's either beer or pork ribs at the end of that walk. My goal is to be able to make a fantastic rack of ribs and briskit, the kind that bring tears to grown men's eyes.
Thanks for the information here, and hopefully I can soon start posting some good pictures.
