• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

rolled the Klose outta the garage for the first time since 11/01 last night.She sat under an EZ UP in a cold rain all night. Put 5 brisket flats on at 5:00 am. 42 degrees and cold rain/fog abounds! A good mix of oak and cherry burning now. Pit is about 220. Getting ready to smoke a Monticristo # 1 "Hecho en Habana,: courtesy of La Cigar Bodega in Greater Toronto, and drinks a cup of Huehuetenago coffee courtesy of "Second Cup," also of Toronto!
Nine racks of spares going on in a bit. Texas BBQ Rub on the briskets, Wolfe Rub, on the ribs. I am cooking for a "Big Game"(no trademark infringment there!:icon_smil ) Party and the weather Sat and Sun. here is calling for a "winter storm advisory! Today seems like the best day! I'll cook the beans, make the slaw , and reheat the meat on Sunday. Not making much money on this one. It is at the local smoke shop where about 20 of us are regulars. Charging $12/person. I've already gotten a job for 75 in May resultant of this job.
I like to take small winter gigs like this for that reason. You usually get a second, larger one from them.

Hey Woody........

All I can say is "I wish it was me cooking!!" I told the boss yesterday that I had a bad case of "rib fever" and needed the day off, when the winds were calm and the high was 58*, he just laughed at me, I was serious!.......now the wind's from the west at about 20 mph and the windchill is about 20*........eat a half a slab of ribs for me!!
 
Update. Took me from 5 am to 7 pm, but by gum I'm done. The Wolfe Rub is really quite good! My wife said they were the best ribs I have done. (They were overcooked.) Briskets cooked long for their size. About 12 hours for 6-7 lb cuts! I recommend Wolfe Rub. I love Texas BBQ Rub too and used it on the briskets, but wanted to try Larry's stuff. I also bought some duck breasts and smoked them for smoked duck and andouille gumbo tomorrow? I took 30 photos cause I was bored. Not much of finished food though cause my hands are always too greasy! Woodman

Well, it was kind of a joke. Right after I picked up the pit, we went to a cookoff in which Ritchie Robin ,owner of Gator was cooking . I had been going back and forth trying to decide whether to buy a Klose or Gator. I bought the Klose, but agreed to put the Gator sticker on it!
