• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I went to Sams to get my meat for this weekend comp. All I can say is wow. I got some nice cuts that I would usually have to go to a butcher for. They are nice thick and consistant. Hopefully the cook and taste as good as they look. Just had to share.
 
Im so glad to see this. I'll be bying a brisket at Sams tomorrow.

Ran into Tammy (Jeff_in_KC's wife) at Independence Sam's tonight. The butts, spares, and baby backs were awful. Ended up finding one good butt in a two pack and two good spares out of about 20. Never found a good baby back in the bunch. Went to Costco later tonight and found a great spare two pack for 1.99. Sam's was 2.29 for spares. Too bad Costco sells those boneless butts. :mad:

I have to say I agree. I went to Sam's on Wednesday and although I bought my briskets from another source for this weeks comp, I found two 7.5 pounders that I would take over them any day. I bought them, now I have a dilemma, aged or not aged? The one thing I noticed is that they have a lot more fat on the top than usual for Sam's flats. Found some nice ribs (babybacks) as well. The shoulder sucked. I was in Independence.

We have three briskets for this weekend that have been aged in my BBQ fridge about 45-50 days. Can't wait to see how they turn out.
 
You will be very happy, unless they are rotten. On the bright side, you should know very quickly if you let them go too long. I did, my wife still says the kitchen stinks.
 
I talked to a regional manager for Costco he said that will not have bone-in butts or whole briskets because there is not enough need. I told him because we are buying them from Sam's.
