• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Go figure...

I over cooked a brisket for a party I was catering. It was dry and falling apart when I tried slice it. I put all pieces in a foil pan and poured the juice from the foil over it and served it.

There is none left. They tore it up. Go figure.

Rest of the menu?

Baked chicken leg quarters
Macaroni and cheese
Brandied Sweet Potato Casserole
Greens and cabbage
Red Beans and rice w/ sausage
Donut Bread Pudding
Eggnog w/ brandy
Sherbert Rum Punch

I'm still full.
 
Bigmista, dry and tender is better than dry and tough which is what you get at most bbq joints. It probably was not as bad as you thought anyway. We are our worst critics.

Soul Food bbq....sounds excellent.

Wifey made a Paula Dean recipe for Bread pudding made with Krispy Kreme donuts. She only made it once, but Mista might have made it better:smile:

I got the recipe from Paula but I used real, thick donuts instead of those little Krispy Kreme air puffs and I use more rum and little Karo syrup in my butter rum glaze.

I will post the recipe today on my blog.
 
Mista, How did you manage to over cook a brisket? You are supposed to be my super-cookin hero.:biggrin:

Smoked it overnight and the foiled it and put it in the oven while I went to work for a few hours. Thought I had it on real low. Obviously I was wrong.
