Gizmo is dead.

My boys raised a pig this winter to butcher. Named him Gizmo. I was afraid they would become attached to him. But they like ribs and bacon more. Here is a rack of his ribs with two beef ribs for supper tonight. WSM getting up to temp. Will hopefully keep this a live thread!
Salt and pepper on both. Gizmo got some killer bees love as well.

Any belly left on the ribs was by pure accident. We butchered three that day and had no idea what we were doing. But it turned out great. Made the bellies into bacon after they cured and this is the first rack I've smoked.
Here they are on the wms. Left room for a chuckie and a fattie on the top rack.
I'm trying to figure out how to add photos here.

Words cannot describe how good these pork ribs taste. I am in awe at how they turned out. Pics later. Baseball games now. Boys happily stuffed with Gizmo ribs.
