More hot tub hens... I know I've made this many times but it's one of my favorites. :redface:
I brined the game hens in a mix of water, kosher salt, turbinado sugar, onions, garlic, bay leaves and black pepper.

Fried some bacon... added onion and garlic to the drippings..then chicken broth and a wild rice mixture....

rubbed the hens with butter and seasoned with cracked black pepper...

then place everything into the drum.

had to smoke a spam too...with cayenne/brown sugar and whiskey

I sprinkled the crisp bacon on top of the rice...

Great looking meal. What temp did you smoke the hens at?

Thank you hammerz_nailz! I smoked them at about 315.. I like cooking poultry a bit higher than most other meats.

Ahh Very nice... I love Game Hens,, as usual when jeanie cooks outside it's gonna be an awesome meal... The offer still stands to be your summer Dishwasher and helper around the campfire,, these ole bones can't handle your winters, lol...
 
It's been 5 min and I'm still laughing about the hot tub, too funny. I'll never look at a hot tub the same way again, thanks needed the laugh.
