Just signed up and happy to be here. This site is everything I was looking for and more.
So about me I guess... Well Im 28 now (just a whipper snapper) and I have been obsessed with slow cooked meat since around 10 years old when I experienced my first lamb on the spit.
From there I developed an unhealthy addiction to pork ribs and everything rib related... if there was ribs on the menu then there was just no other option.
I have spent most of my working life in the mining game which had me doing exploration in the back of beyond , we are talking 6 hour drives on bush tracks from the nearest small town , usually flown in by chopper or small plane onto a farmers dirt runway.
Suffice to say it was easy enough to make a fire without bothering anyone and the company would pay for all our food so a slow cooked hunk of meat was enjoyed many a time.
Now I have left that all behind (she who must be obeyed wants kids ) which requires me to actually be at home. And I am looking to up my BBQ game in the backyard.
I have built a rough and ready offset smoker using 44 gallon drums , which seems to go alright , but I am still learning its quirks (it needs insulation Im thinking).
Anyone in Oz or WA I would love to hear from you , the long term plan is to get into food as a profession and BBQ is the weapon of choice. Maybe one day I will see you at the BBQ wars in Port McQ.
