• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

It has been quite a while since I bought any full spares. We usually get either loin backs of STL's. What do full racks of spares typically weigh for those that buy them regularly?
 
They are classified as either 3 and down or 4 and over. The ones I see around here are typically 4 and over.

If you are buying from a store, I go by what they look like. Fatty-ness, shape, what you want to do with them. There is a difference in whether you are trimming them or cooking them "as is". Myself, I look for the ribs that can go on the cooker without much trimming.
For example, this is a slab that went right on the kettle without any trimming.

I have 2 slabs cryovaced in the freezer one is 4.58 and the other is 4.39 pounds.
 
I was thinking around 4 to 5 pounds per slab. A girl from work lives near a market that had full spares on sale for a decent price. I told her to pick me up a couple racks. These packs have two racks each in them. They are way bigger than 4 or 5 pounds. One of the packs is over 14 pounds and the other is over 12. I'll get them tomorrow. Hopefully they won't be all fat.

Seems awful big.....Just hope they didn't pack some crap in between, like they do with the triples. I remember buying some fresh half racks of beef ribs, and the sneaky bastards had packed some scraps on the under side.:mmph:

Well I hope for their sake they didn't do anything like that. I don't take kindly to that sort of thievery. They have a Facebook page and I have a camera.
 
You make your best judgment, based on what you see when you buy. Just keep a sharp knife nearby, trim the larger areas of fat, trim the obvious pieces of meat that won't turn out the way you wish and throw them in a ziplock bag in the freezer for later, and cook them. It's all edible, and, if you take notes, an education for next time.
 
Could they be two packs?

The girl that got them for me said there were two slabs per pack. Even at that we are talking about 6-7 pound slabs.

I'll know tomorrow when I get them from her.

Could be like the surprise I got with mu Costco ribs and have three in the package.

Both packs had three racks each in them.

I started this thread because the girl that got the ribs for me said there were just two racks in each pack. I thought 7 plus pounds per rack was pretty heavy. These are just shy of 5 pounds each.
 
Those sound like some nice ribs. Most stores around here don't sell full spares. It's funny last time I saw full spares at the store they were MORE than the SLC. Makes no sense.

I look for for full spares of at least 6 lbs. The bigger hogs seem to have more fat in them and fat means flavor and juiciness.
 
Some of the best racks of spares I've cooked have been in the 6 to 7.5lb range. I like them big and meaty. I will pick through the average weight ones to get to the ones with more meat. Even if it takes me 10 minutes of picking and deciding.

The average I see locally here is around 5 to 5.5 lbs (non enhanced).
