• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

What's the best frying oil to use to fry a turkey or chicken for that mater? Vegatable, soybean, sunfllower, any other one? Also which is the more healthy one?
 
Peanut works very well...high smoke point, etc.

I've used canola pretty often and it is cheaper than peanut oil. Canola's probably healthier, too.
 
I have used peanut oil, canola, and just plain vegetable oil. Since most of us buy it, fry it, and then dispose of the oil, I am of the opinion that you should go with the cheapest. The temps used for frying a whole bird do not approach the smoke point for any of these oils, so that is not an issue. Since it is once per year, I would not worry about the health issue-particullary since you will get three answers at which is most "healthy" anyway.

As always, my opinion only.
 
Just watch for peanut allergies. Canola is a safer, cheaper and allegedly healthier alternative.

This is a great point. Peanut allegerys can be serious in children.

As nobody in my house is allergic to Peanuts, we use Peanut and Canola oils. Both have high smoking points.
 
sis kids have peanut allergies.

she comes over TDay with kids.

One bird in p-nut oil

as long as her kids dont eat it,they're fine (p-nut oil in air dont affect them).

just a few extra cents there
 
we use peanut oil for birds. no allergies in our family. use canola for most everything else
 
I used to use Peanut oil.... Then, a commerical guy turned me on to "Creamy Shortening" from Sam's -- 1/2 the price of the peanut oil... but designed for frying, so high flashpoint, and it holds up well.... you get get about 5 turkeys out of one batch of oil before it is beginning to scortch.

IT is vegetable shortening, so not "un-healthy" -- but not Canola. I use it all the time however. and it works great
 
My husband is in charge of frying the turkey. He has used both peanut and canola oil. Most often the canola oil just because it is cheaper as mentioned before. I didn't really notice a differnece in taste when he used the peanut oil. We also throw out the oil after cooking the birds.

As an fyi, some recipes suggest using an injection. I don't recommend injecting the birds with any baste containing honey. It makes a mess and burns easy.
 
I too use that liquid "Creamy Shortening" from Sam's. Have used it over the past several years and the Turks always come out great. Last year we fried 12 turks without any degradaton of taste due to the oil breaking down.

The biggest key in frying multiple birds in the same oil, IMO, is to not season the outside of the bird with rub. It all just washes away and burns in the oil. We inject the night before and then fry... all good...

If I have to deep fry I always use Groundnut oil.

Lard always gives the best results esp with Fish & Chips (Frys).

EDIT: I've just done a search and I've noticed that Groundnut oil is the same product as your Peanut oil!!! :-D

Groundnut oil

Extracted from peanuts (so also called peanut oil), groundnut oil is pale in colour and of a light consistancy. It has a subtle, pleasant flavour and can be heated to a high temperature without burning. Corn oil can be used instead of groundnut oil.
Uses: Groundnut oil is particularly popular in Chinese cookery. Suitable for stir and deep frying.
To store: Store in a cool, dry place away from direct sunlight.

I bought one of them filter systems from Home Despot, and then mark the jugs so I know what has been used, and the day it was used.

Its either 4 times or when the date hits 3 months from first use, stored in a cool dry place, and I double filter the second and third times.

Are you talking about those battery operated oil pump filter things? If so, I picked up one on clearance at the Home Depot 2 years ago for $4.. I gotta tell ya, I was skeptical about it at first, but it has been the best tool I've seen for emptying out the oil from the turkey fryer!

I've used mainly canola oil when frying turkeys and filter it after each use with some cheesecloth and a couple paint strainers. Depending on how many birds fried i'll use the oil@3 x. I inject but don't put a rub on them as it burns off. Last year at work we bought peanut oil and did up a bunch of birds for all 3 shifts and the oil must have gotten too hot at some point and some people claimed their turkeys had a burnt taste.

When it comes to frying, healthy does not come to mind!
