Just wanted to say a quick, "Hello!" to everyone. I've been cooking since dirt was invented, but I am new to barbecue. Sure, I've used charcoal and gas grills for ages, but I just bought my first hot smoker last year. It's a small, electric model with a pan for wood chips. I've done some decent pork shoulder, spare ribs and a really nice boneless leg of lamb in it. I'm finding the timing is right to get more serious. I'll be lurking here a lot, picking up information.
