Is it possible to freeze already cooked prime rib to use at a later date ? I have a nice chunk left over and am prime ribbed out at the moment.
 
Yes, you can freeze it. Exactly how to proceed depends on what you want to do with it later. Me ? I like to enjoy it as Prime Rib again. So, I'll carve out 1 to 1.25 inch slices and vac pack each of them separately and freeze them. When I want a nice slice of PR in the future, I pull a slice out and retherm it in a Sous Vide bath at about 130.

If you are forward thinking and your vac sealer can handle it, go ahead and have some cold au jus in the bag when sealing.
