• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

freezer burned brisket :(

So I have a prime brisket in my freezer but I can see that it has freezer burn throughout.. I guess the cryovac tore somehow. Is it a loss? Thanks!
 
Thaw it out, trim it off down to where you have a fresh color. You may still get an off taste depending on how deep the freezer burn is.
 
How burnt? I'd still cook it unless it looks like a complete raging dumpster fire............and even then I'd still cook it to see how it turned out..........though also cook something as a back up :becky:
 
For a prime brisket, I'd definitely cut the burned parts off and cook it. Brisket's too damn expensive to worry about a little thing like freezer burn.
 
It's fairly burnt.. I guess the only thing I can do is thaw it out and see how bad the damage is.. It was a nice one too.. oh well! I'll survive.. :)
 
I'd trim off the freezer burnt part and smoke that sucker. Will be a fun experiment to let us know how it still turns out. I would absolutely not throw it away. I would still absolutely cook something along with it as a back up :-D

Cook it like was said with a small back up. If taste is off too much feed it to the dog as a treat or a neighbor you don't want to keep asking you for free BBQ he won't be back. Freezer burn will not hurt you just the taste is off. IMO
 
Longest I kept a packer in my freezer before smoking with fairly close to a year. Looked like there was an awful lot of burn on it but once it thawed I only trimmed a tiny amount of good meat from it that was affected. Rest of the meat was fine and it turned out great.

Maybe I just got lucky but it's such a large, thick cut there should be something substantial you will be able to save. Like others have said, once you get to trimming you'll know how much good you'll have or if you just wanna chuck it and move on. Good luck.
 
There's no health risk to freezer burn. It's really only problem of taste and texture. As others have said, defrost it and trim away the burnt bits with a knife. Kind of like one would do after dry aging a piece of meat.
 
Good advice here...Trim the freezer burn off, and cook it. Brisket leftovers are awesome, in chilli, eggs, mac and cheese...

It wont go to waste...I am pretty sure smoking it will be just fine!
