I cooked some baby backs on my WSM last weekend.

No foil! In my experience foiling ribs destroys the bark and overcooks them. The "crutch" was invented as a way to speed up the cooking process if you mis-time them. I do not believe in cooking ribs in foil as a regular practice.
 
Nice rack Michael! Looks very tasty and I agree with you on the foil. I'm in Lynnwood once a month or so...too bad last weekend wasn't one of those times.
