• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Flatiron Steaks

We just picked up a couple of nice aged looking flatiron steaks at the grocery store. They look awesome in the package! How about some suggestions/recipes on what to do with them? I have never purchased one before that I can recall anyway.
 
Jeff, the flatiron steak is cut from the chuck. It is the same muscle as the Top Blade Steak, just cut differently. This is supposed to be the second most tender muscle in a beeve.
The flatiron or top blade has a lot of good beefy flavor, in my opinion.

I personally cook them just like I would any other tender steak, like filet, ny strip, ribeye etc.

I also use them for fajita's or in stir-fries when I really want to be sure I have tender meat [to impress guests ya know:lol: ]

The flat iron makes an great bourbon steak too.
I just mix Dale's marinade with a little Wild Turkey and soak the steaks for a few minutes-no more than 1/2 hour, and grill.

Try mixing 2 parts Dale's to one part bourbon, add a little brown sugar, and a little crushed garlic.
Short marinate, hot grill. Good stuff.
 
I concur... Season as you would any steak and grill to your desired temp. They are pretty good. Tender with a nice flavor.
 
You can season them any way you want. The flavor of the flat irons are right up there with filet. I probably cook these 1 time a week. Every tuesday at Kroger they are on special for about 1.99 lb I don't know why but I aint complaining. Anyhow I believe less, is more with these steaks salt, pepper, garlic and sometimes onion powder. They seem to be best cooked hot and fast and about med rare-medium. Get a good sear on em so the develop a nice crust. In my opinion one of the best steaks you can get for the money.
