• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

First time pork belly cook

Bought a 10lb belly at Costco. I cut it into 3 pieces, scored the meat on both sides, then generously applied a basic rub. I put all 3 hunks on the smoker for 3 hours at 250 degrees. After 3 hours they probed at around 175 degrees. I pulled the meat off the smoker, then turned the temp up to 375 (easy to do with a pellet pooper). While the smoker was heating up I sliced the meat into 1/2 inch thick strips. I placed the strips on the hot grill and applied a light coating of Famous Daves Rich and Sassy sauce. The strips were on the grill just long enough to set the sauce. My family and friends went crazy over the meat. Personally I think it might be the best thing I've cooked! I regret that I did not take pictures to share. I encourage any one thinking of trying to cook a pork belly to give it a try.

Sounds good. I've done a few of those Costco PB's but haven't tried the slice 'n grill. I usually take it to probe tender which is around 200, no wrap.
