So - here are the results from the first smoke on the The Great Outdoors Smoker
I did a salmon filet with lemon zest, lemon juice, garlic, olive oil and fresh dill. A catfish filet with pepper and caynne pepper, some sea scallops and chicken breasts stuffed with jalapeno and cheese then wrapped with bacon. My BIL came over and knowing we were doing a test cook brought over 4 salmon steaks and topped each one differently - Pesto, McCormick Southwest Seasoning, Sofrito, and one with Soy sauce and wasabi.
It took much longer to cook then I anticipated and we finally finished everthing in the oven. Served corn on the cob and biscuits.
For a first smoke it wasn't too bad but I wish I had taken notes. The other thing is I have to rely on feedback from Big Al since I don't eat seafood. There wasn't much leftover so it couldn't have been too bad....
