Finished up my Brethren Inspired UDS detailed here:

Fired it up today and made some Bacon, Ground Chuck, Cheddar and Brat Fatties. Good first run. Over all I was very pleased. UDS temp were very controllable. I do think that I have to back off on the hickory though. This drum does a nice job of generating smoke.

nice looking fatties!.. what temp did you end up running them at?

Thanks, I kept the temp at 250 +/- until the internal temp was 170. With the pork sausage in the center I wanted to make sure they were done. I then wrapped them in foil, shut the intakes down and let them continue to warm on the UDS.
