• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

First Major Cook on the Bandera

Had my first major cook on the Bandera I scored off Craigs List in August. So far, I'm extremely happy with it. I did the baffle mod, which you can see in the pic below. The Bandera's ability to retain a constant temperature far exceeds my NBS diamond smoker. I was in hog heaven.

From top to bottom in the chamber you'll see brontos (in the back), sausages in the front from Southside Market, More brontos, Spares, pan of barbeque beans.

Ahh makes me miss my offset even more. What did you have going in the waterpan?
 
Thatl looks great! How was the beef ribs, I can't find them with enough meat on them, more bone than meat usually!

The ribs were great, but yes, slightly less meat than I would like. However, I have just realized my love of the beef ribs, so I'm not sure I can complain. The flavor is such a great counterpoint to the sweet meat of the pork ribs.
 
Great Looking Grub Adam!

I loved my Dera, but it is in a better home now with Big John (JohnMc348 ). :lol:

She will cook a lot of great food for you, for sure.

Great looking grub. Makes me want BBQ right now.

I have to I say like beef ribs the best and they are always pretty cheap which is an added bonus.
 
did you find it harder to get your bandera up to temp vs the Black diamond? you using any type of charcoal basket? what other mods besides the baffle??

Both smokers seemed equal in how easy it was to get the temperature up. Holding it is far easier with the Bandera. The Diamond is so finicky ... too much coal, and the temp skyrockets ... but if I let it sit too long, the temperature can drop with in a half-hour.

But the bandera seemed to be more forgiving.

I have only done the baffle mod so far.
