• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I've done a couple of burgers and dogs grillings. While I finished our front patio I had this going.
2 slabs of spares, 1 whole chicken and some corn.
I used Dizzy dust on the ribs and made some KC style BBQ that was a little spicey. The chicken got Ragging river rub. I planned on the 3-2-1, but it ended up more like 2-2-.75

The chicken went on when I put the ribs in the foil. The corn should have gone on a little earlier. I pre-buttered it and seasoned it with crushed red pepper, and a few other spices.
I ended up with about a whole plate of snack pieces, which ended up being done after about 2 hours.

A few notes, I need the side box for this thing. It would have been way easier to control the temps and with the placement of the food. Temperature was a little high around 250+ at the grill, which is why the initial 3 hours ended up only around 2. and I think I took off too much of the membrane on the back of the ribs causeing a few bones to fall off.
All the people were pleased, Tiernan(my 2 year old) loved the ribs with the spicey sauce.

And Spares are on sale again

IMHO - that's what its all about! If my kids tell me they really like something I've cooked - that makes every minute spent worth it!

Glad you made it over here Andy! :cool: Like I said on vwe, the ribs look a lot better than my first 5 attempts, and the spatchcocked chicken looks great. :biggrin:
 
THe side box is nice but isn't necessary. Going by your picture above, you have the coals spread out all along the charcoal grate.

Make a smaller fire and stack the coals over on the right hand side by the intake vent. You can also put a water pan on the right side to act as a heat sink and keep your temps stable.

All stuff I learned from the Brethren. Now get on over to Cattle Call and introduce yourself!

The coals are all on the right side. I put a brick on the coal grate to keep everything over there. Maybe about 8 inches of the bottom was coals. I think the main problem was too much charcoal. Next time I'm going to get a water pan instead of the bowl I had on the left side. and maybe try another on the grill above the coals. I need to figure out the grill cause the temps kept going up then down after I would adjust the vents. I need to make small adjustments and wait.
