• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Did my first Fatty yesterday added a little hot peper cheese, some sharp chedder and red onion, used some Meijer brand (local chain) sausage.
Did this in the Smokin' Pro with the offset the coals under them in the picture were from the night before I only wanted to clean once. It was awesome.

I also did a 5 lb Prime Rib in the Smokin' Tex. This is almost too easy, I put a head of garlic and some rosemary on the wood box (no wood) cooked it at 225 until it hit 125, opened the door to let the heat out, turned it down to 140 and 1.5 hours later it was at 135. Foiled it and in the cooler till dinner (about and hour or so) I then fired up our convection oven in the kitchen to 550 and left it in for 10 minutes to sear the outside. Family said it was the best they ever had.

I also worked on my drum smoker project

If you wrap them in foil for about an hour, the cheese will set up a bit.
 
Wrap them for an hour, You kidding me, the family almost would not let me take the picture before they started grabbing at it. Thanks for the tip I will give it a try next time, I am thinking Italian sausage with fontenilla and mushrooms.
