• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

First cook on the WSM with pron

OK- I got up Saturday and was planning to do a cook on the UDS, but got sidetracked when I saw the thread by Blutch on why by a WSM? I had gotten it before I built the UDS and just had not cooked on it, I did a few mods to it and just planned to use it for comps. Well I'm taking a Paul Kirk class in a couple weeks and decided to get to know the WSM! Here are the results, not bad for the first cook!

I used a foiled clay pot base in place of the water pan and used Kingsford with a few hickory chunks.

why the clay pot, more of a heat sink? I have heard lots of people using a brinkman pan instead of the shallow webber. And did you still fill it with Water after foiling?
 
Nope! I saw it on the Stoker site and inquired if anyone was using it on the VB site the same time the Piedmont or double pan Brinkman setup was a hot topic, and it got favorable reviews so I gave it a try. No water or sand and no High temps, it ran at 225-250 the whole cook @ 4.5 hrs.

How big is that clay pot base? Looks to be the exact same size as the charcoal chamber/ring?

I took the center section of the WSM along with the bottom grate to a place in my area called "Half Price Pots" and found one that fits perfectly in place of the water pan.
