• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Was playing around with fire today and decided to go ahead and throw some meat on. Ribs, Chicken and the obligatory inaugural Fatty. Here are some realtime pics of the cook in progress. Firebox door is open just for purposes of the pic. Smoker likes to stay solid at 250, have to 'goose it' a little to keep 275. For first time, not to bad on the fire mgmt., I think with some more experience this will be a pretty responsive smoker.

Mmmm ribs chicken and fatty! Looks like your cookin now! I'm guessing to hold a 275 fire you need bigger splits in that beast.
 
Thanks Everybody. Here is the final platter. Chicken came out great,ribs were good but could have been a tad more tender and the fatty... well it was a fatty.

Yeah, it definitely likes the bigger splits. Which is a good thing, when I've been hearing about people using splits the size of a coke can I was worried I'd have to resplit all my wood. I can easily use the same splits that I use in my fireplace, so I'm good to go.

Very nice...Great way to break it in...
I find in my old Longhorn that bigger splits leave behind a better bed of coals...Might be a bit tougher to get them fully lit but the overall result is a positive...
