• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I was up at 0500 CST. Started the fire at 0530 and had it to temp by 6am. I have 2 pork butts and 3 briskets on right now. 2 Wagyu and 1 choice. Got some ribs and a Prime Rib I will put on later. Its a great day.

Very nice break in cook on the new Shirley. Where do you get briskets in your area?
 
The choice I got at Sam's club. The 2 Wagyu are from different supplies. One is a SRF Gold Grade and the other is from Carroll Lewis from www.marbleousbeef.com out of Dallas.
 
Looks like you know what you are doing, is your Shirley really as easy as you have made it look to be? Nice smoker and a good first cook on the way.
 
Very cool. So much room in there! Nice to see the setup as mine will be 30x70 so pretty close. Looking forward to the results.

Two hours in.. color is coming along nicely! Im trying not to post too much but the its hard to slow down!

Looking good!! Real good! Can't wait to join you. What a great first cook!! I had a SRF gold in my cart for the new cooker but ended up getting a case of prime from a local grocery for the same price. Figure I could use the practice more than the treat since I've never used a stick burner before.
 
Coming along nicely! Has the bark developed enough or are you wrapping by time?
 
It's going to take a lot of meat to fill that beast up. :thumb:
