• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Brothers, this is so good with just the rub. On the plates I'm am making up. I was thinking of just putting the sauce in cups on the side. So they would have a choice. Is this a good or bad ideal. Please advise.:-D :-D

Looks like a successful first cook. Sauce on the side is the perfect call - IMHO they don't look like they need a thing.
 
I always serve sauce on the side.

It's 4 pm here in NY and I am starting to droll alot. I have made Keri's beans and the chicken thighs and brats will be cooked up shortly.......those are some FANTASTIC looking chickens. How do you get them to look so good? What temp you cooking at??? Good Luck with the new rig.

Maintaining 250 in the main chamber. I got the upright holding at 150. so I'm using it to hold the chicken until I'm ready with the plates. Then I have to fridge and hold til morning. All will be delivered cold with reheating instructions attached to each plate.
 
That's a flock of good lookin' yardbirds, Jacob! Good job on yer shakedown cruise!
 
I'm in the process of making the coleslaw. I'm boiling down some vinegar and sugar. Going to add to a small sample bowl and see how it taste. I will probably stick to what I'm use to serving but wanted to try this.
 
I just love you Brothers. You make a backyarder wanting to turn pro. Feel like a Pro already. My head is swelling but I think I can survive.:-D :-D :-D

These plates were made up and delivered hot. Had to go catch some calls. So I took some to friends I knew were working today.
One of these whole birds is skinless, can you pick it out?
