So I did my first chuck roast on fathersday and made some shredded smoked beef burrito's, with homemade Guacomole, sour cream, and some Hot jalapeno's. Served up with corn steamed in the husks and some smoke roasted mac-n-cheese made with chedder, mozzerela, and some smoked gruyere. Our oven died on us and we had to buy a new one, so I tried to put her to good use by taking the sredded beef and adding some onion, garlic, green onions. tomatoes, and a little salt and just reducing it
until the liquid was gone...:thumb:...
Wasn't quite sure what temp to pull the roast at, or whether to foil or not. I pulled it at about 195*, and I did not foil....Did it on my drum, and man it had the smoke flavor going on! Maybe a little overkill, but hey we had fun, and it all turned out great.:-D Oh I almost forgot to admit to over smoking the jalapenos..OOOPPS!
