• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

New at the BBB fun. Made two with pork loin and they were great. This is the first with a pork butt. About 5 lbs, took bone out, used tender quick, only went about 8 days in the cure just to see how salty it was going to be. Really turned out great flavor. Froze sliced on waxed paper then vacumned with the little handy vac. Fried some to test and the wifey and I both thought it was wonderful. :biggrin: Just love this stuff!!! All because of this forum.:eusa_clap

I use Tender Quick which most grocery stores carry. It is made by Morton and looks like a smaller bag of Mortons salt. Here's a pic. I do want to try some other cures to see the difference. Good luck and you really need to do this. Do a search and the brothers here have all kinds of help.

I made some BBB the weekend of Thanksgiving for the first time - excellent stuff. Although to me it tasted much more like ham than bacon, it was still very good. I way over bought (the shipping was the same for 1 box as it was for 3). If anyone in the KC area wants a box (enough for 25 lbs of BBB) - I got some extra.
