• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Went to Sam's to get a case of butts and saw that they had a bunch of maple breakfast link sausages reduced for quick sale. Normally ten bucks for 3 #'s reduced to $4.99. I pulled the skins off and molded them into two 1 1/2 lb. fatties. One is in the freezer and the other one will be going on the 'dera in about 20 minutes.
 
Great find Neal, I did my first maple the other day, I agree with everyone about being the best flavor.
 
In my area, SAMS reduces meat for quick sale on Friday mornings. I think it's to get a fresh stock for the weekend crowds. There was a woman there Thursday noonish buying 2 packages of bulk ground beef (not the chubs). All varieties. Said they mark down 50% every Friday, but they marked down early this week. So I'll start keeping my eyes open.

And yes the Maple is the top Fatty, closely followed by the Hot ones.

I love maple.

But for various dishes, a smoked Sage fatty can't be beat, and smoked italian fatty, chopped and added to Trader Joes salt free marinara served over pasta is a signature meal here.

That being said, I love maple.

Homemade sausage gravy, made with a Sage fatty, real cream, and served over homemade buttermilk biscuits. Sunday breakfast in heaven.

I also like maple.

Problem is I ain't got no smoked fatty! Guess who went to the grocery store and picked up the needed ingredients...and some sausage, and a rack of wibs, and a ham? Bunch of FARKERS! :wink:

The fatty I made out of the deskinned maple links from Sam's was good but there was no maple flavor. I'm wondering if the maple is in the casings?

Hey Neil, I had the same problem with "maple-flavored sausage" I got at Costco, and I did not skin it. Go figure. Hope the fatty was still good.

Jorge, sorry for all the angst :D

Up early this morning [400am local] to prep loin ribs for a cook this afternoon. I made the sausage gravy with the sage fatty, and took Bill's advice on the hashbrowns with peppers and onions. My wife swooned-good to know something I do can make her swoon! Good eats. I now have been instructed to pick-up more sage JD to make fatties for the freezer, so we can have this breakfaast on demand.
