Cooking a Wagyu today, prepping for this weekends comp. At 350 (fast cook method) I was at 205 degrees in 2 hours, then 35 mins in pan.

Now its going to sit in cooler for 3 hours.

By far fastest I have ever hit 205... Brisket looked great, great color, bark, etc.
 
Once heard Daren from Iowa Smokie D's say he didnt start his brisket until his chicken was done. Wanted to do it just to show it could be done.
