I'm sitting here thinking I'd like to cook something after work, but not sure what's out there for my options. Most everything I've cooked on the UDS takes 4 hrs or more other than chicken quarters, but I had those yesterday.

What other options are there for relatively quick BBQ times (3 hours or less)?

I'm sure you could do Baby Backs in less than 3 hours if you do them hot & fast then foil them to finish.
 
Pork Tenderloins are awesome.
I love pork tenderloins.
What the typical smoke time on these?

Would it be smoking properly around 250*...1.5 to 2 hours?
Do I want internal temp around 190-195* like a pork butt?
 
Brine the meat and hit it for a bit over high indirect heat. I do mine to about 175 internal. I don't like over cooked lean pork. Looking at it, 175 may even be a bit high.
