• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I've taken to making pastrami from eye of round instead of brisket. It's a lot leaner and slices up pretty nice. I've been using RandyQ's recipe and it's REALLY good. These pics are from the 3rd batch I did a few weeks ago, smoked with a combo of oak and cherry. I have friends and relatives offereing to buy it off of me now :biggrin: :biggrin:

Funny that you should post this, Bonehead. I went to by a corned beef the other day (not enough time to make my own) and the store had the normal corned point or flat, but they also had a corned round (it didxn't say if it was top or bottom round). It was very good.

Your looks great. I'll have to try that soon!
 
The first time I tried this was with a store bought corned beef. It kicked a$$, but it was pretty salty and still kinda tasted like corned beef. I had bought a whole eye of round a while ago 'cause it was a good deal and just stuck it in the freezer until I figured out what to do with it. After I got turned onto the pastrami I thought it might work and boy did it ever, so that's what I've been working with since. I like it almost as much as pulled pork, and that's saying something.
