• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Backyard Chef and me may be cooking a catering gig for a graduation. Woman want's ribs, brisket, shrimp, grilled vegetables, two traditional side dishes and two exotic dishes. Any recommendations for the exotics?

Grilled asparagus, seasoned with asian roasted sesame oil and sprinkled with toasted sesame seeds.

Grilled portobella mushrooms seasoned with evoo and balsamic vinegar.

"This salad is delicious! Everyone I serve it to loves it, and it looks beautiful as well. Excellent for summer barbecues. This recipe is a hit!!!" Original recipe yield: 4 servings.
Prep Time:15 MinutesReady In:15 MinutesServings:4 (change)

INGREDIENTS:
  • 1 (6 ounce) can sliced mushrooms, drained
  • 1 (6 ounce) can sliced black olives, drained
  • 1 (6 ounce) can artichoke hearts, drained
  • 1 (14.25 ounce) can hearts of palm, drained and sliced
  • 1 (15 ounce) can baby corn, drained
  • DRESSING
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 2 sprigs fresh parsley, chopped
  • 4 leaves fresh basil, chopped
DIRECTIONS:
  1. <LI style="FONT-WEIGHT: normal; COLOR: #000000">In a large bowl combine mushrooms, olives, artichoke hearts, hearts of palm and baby corn.
  2. In a small bowl combine olive oil, lemon juice, garlic, salt, pepper, parsley and basil. Pour over vegetables.
 
Grilled eggplant. Slice eggplant 1/2 thick and brush both sides with olive oil then place on grill using direct heat method. Flip the eggplant when bottom side is brown then place mozzarella directly ontop of the cooked side. Add a slice of tomato, some basil, parmesian and season salt. Remove when cheese is melted. Voilla, individual eggplant parmesian slices!

Scratch that, forgot it was a graduation. Is it college grads? Age 21 and over, my recommendation stands then.

I did a gig once for a Grand re-opening of a ranch. My menu was as follows:

Vegetable soup
Fried Frog Legs
Sauteed Rattlesnake
Pan Fried Catfish
Wild Boar "French RacK"
Elk Tenderloin
Roasted Pheasant
Apple Pie and Cream

Toughest gig in my life; no practice time. I pulled it off with the help of the help of several family members. It was a 16th century smoky mountain theme of sorts. The owner hired a wahsboard type band and served moonshine. Killer part was there were really rattle snakes all over the ranch under the porch on the way to the kitchen etc. You would rarely see them, just hear them.

If the owner ever wants to do this up again, I am charging for hazardous work conditions:lol: .

I think the tongue will work, so will smoked salmon. I make them often. Both can be prepared ahead and chilled. Both can have some fancy (but simple) sauces on the side.

what, no chicken? how about bringing in a little exotic flavors of the islands with some jerk chicken and some whole herb stuffed red snapper served with lemon, sea salt and some good olive oil. if you do that, don't forget to score the fish and rub it with some sea salt, olive oil and cracked black pepper and your gonna need one of those fish baskets to be able to flip it easily.
