Eggs Benedict w/ Fried Green Tomatoes
I had a half a small pack of the thick sliced bacon for pig candy and after getting it going (250 indirect) I started thinking about this dish with fried green tomatoes stacked with layers of cream cheese I saw once and well – that’s basically were I ended up. They are stacks of fried green tomatoes with a little bit of cream cheese in between each one and all I did different was to add some of my “extra hot” pig candy in between each layer. All the ingredients added together in one wonderful mouthful was not that hot even though the pig candy was made with some super hot habs that I dried last year (got a big fresh batch about ready again). The poached egg and hollandaise sauce is just about all I could stand and I gotta tell you that I have had these at Brennan’s in New Orleans and they were not this good but it’s only because I love hot pepper.
