• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Now is the time locally for harvesting eggplant. These are great when you cut them in 1/2" slices then baste or spray both sides with extra virgin olive oil. Grill over direct heat till golden brown and soft on both sides. Now take your grilled eggplant and layer with your favorite red pasta sauce, mozzarella, parmesian, ricotta or alfredo, and sausage or prosciutto just like you would when making lasgna. Bake at 300* for about 45 minutes and you have a wonderful Italian classic; Eggplant Parmesian. Did this on Sunday afternoon and it brought the neighbors out.
 
Or . . . Baba Ganoush! Puree those bad boys up with some tahini, garlic, lemon juice, a little cumin and some cayenne and you got some pretty good chit there. A grilled eggplant moussaka might be pretty good, too. Getting hungry . . .

Moussaka made with grilled eggplant!! Delicious. Of course, you should use smoked lamb for the meat. :D

We cube the eggplant along with summer squash/zuchinni, bell pepper and onions, toss with S&P and some olive oil and then grill using a grill basket. It's great with grilled fish, chicken bosoms, etc.

Naturally! Unfortunately, I don't often get a hold of much lamb. And the wife is a little squeamish about eating it, anyway. I always tell her, "try it, honey, it's not baaaaaaaaaaaaaad."

Anyone remember Geoff Smith, the Frugal Gourmet? He had a great recipe for Eggplant Meatballs. Wonderful! I can post it if anyone is interested...

I love eggplant. In fact I'm freaky for it. I will try the grilled Eggplant Parmigiana. Sounds great.

I've never seen an eggplant... never looked that far up a chicken's butt.

We can get good lamb here most of the time--more lamb than MY wife wants, acutally. I sort of have the same problem you do. I tell her "Even Mary had a 'little' lamb. :D
