• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Looks like thanksgiving is 2 days early here at our house! Going with a naked bird with butter everywhere! 24lb, barely fits on the WSM 18!!

I'll say this! The water pan makes a huge difference in temp. I have to run the dampers wide open to keep 250! Obviously this will effect how long my fuel runs. Will it burn up pretty quick?
 
Well I think I ruined it! I got woke up and rushed around real early. And wasn't clearly thinking as it was. The entire bird ended up with thick black crap that wiped off. I know the bird was naked. and you might see it a little bit. but this was totally different. It was like my botched chicken wings. I took the turkey inside. wiped it down then added more butter and threw it in the oven! Maybe I'm paranoid. but the WSM wasn't running right from the start.

All I know I've cooked many of things. there is nothing I've cooked where I can take a towel and by the time i wipe off the food the towel is covered in black.
 
Just drag out your offset and redeem yourself with another Bird for supper time ..........or fire up the Weber Kettle and break out some Steaks........:wink:

I should of used the offset for this cook! I think the problem I ran into. Couldn't be anything else! The turkey was to big for the smoker. It didn't allow the air to flow properly and in return built up smoke and caused "bad" smoke.

Does this sound possible? I knew I should of dragged out the offset!!

I've already decided I'm redeeming myself with the offset. I was pretty worried about the red oak I have already split not being ready for smoking. But my neighbor has used it several times with no ill effect!

You are Correct. Smokers gotta flow air- they are not meant to be stuffed like a Turkey...... :mrgreen:

Man I dunno what I was thinking! but yeah there's no other explanation. Thing's just were really weird for me today! I got woke up by a phone call. I had to rush out of the house. I slept in a little to late. Was in a rush. got the WSM fired up and didn't look back! I knew the thing was to big, and considered pulling out the offset!

But to be honest with ya, The turkey is doing fine! I pulled it just in time probably. Wiped it down, put a lot of butter on it and threw it in the oven! Time to pull out the big guns, You guys will see me again! Still gonna take pics of finished product today! It's looking pretty good!
 
I've had my WSM do this to me before but never really figured out why. I think condensation builds up on the underside of the lid and drips on the food maybe...

Haha I don't doubt that! Well I've decided this will be my test bird! Headed to the store now to find a turkey if everyone hasn't bought them all yet!! Weather's gonna be nice Thursday! I guess we gotta learn from our mistakes, but man this was a stupid one I could of easily fixed! Kinda funny.

Just remember, DO NOT stuff your smokers like a turkey! Lesson #5028032 in BBQ techniques!

Using both racks in your WSM, it would hold two 14lb birds fine. I just mentioned it in case you needed more meat for guest etc.

Yeah I over estimated the WSM! Shouldn't even considered cooking the giant bird on it. But here we go! Finished turkey picture! It's not purdy but seems edible.

I just got back with a 14lb butterball for the offset, I have some fresh deer meat from Yesterdays hunt. Gonna throw the turkey and some deer in tomorrow or Thursday for turkey redemption!
